Turkey Zucchini Boats

Prep Time: 15 minutes

Cook Time: 30 minutes

Servings: 4

Ingredients:
  • 1 pound lean ground turkey
  • ½ medium onion, chopped
  • 2 medium zucchini
  • ½ cup marinara sauce
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons mozzarella cheese
  • Salt and black pepper, to taste
Instructions:
  • Preheat the oven to 400°F.
  • In a large skillet over medium-high heat, add the onion and ground turkey. Season with salt and pepper.
  • Cook for about 10 minutes, breaking the turkey apart as it cooks, until the turkey is cooked through.
  • Stir in the marinara sauce and cook for 2–3 minutes.
  • Cut each zucchini in half lengthwise. Use a spoon to scoop out the seeds and center, leaving about ¼ inch of zucchini around the edges.
  • Place the zucchini halves in a 9 × 13-inch baking dish.
  • Spoon the turkey mixture into the zucchini boats.
  • Sprinkle Parmesan and mozzarella cheese over each boat.
  • Cover the baking dish with foil and bake for 20–30 minutes, or until the zucchini is tender and the cheese is melted.
  • Allow to cool slightly before serving.

Ingredients:
  • 12 ounces canned tuna packed in water, drained
  • 2 tablespoons finely chopped onion
  • 1 apple, cored and chopped
  • ¼ cup chopped celery
  • 3 tablespoons salad dressing of your choice
Instructions:
  • In a medium bowl, combine the tuna, onion, apple, celery, and 2 tablespoons of the salad dressing.
  • Stir until well combined.
  • Add more dressing, if desired.
  • Serve on whole-wheat bread, in a whole-wheat pita, or over mixed salad greens.

Tomato White Bean Soup

Ingredients:
  • 2 teaspoons olive oil
  • 4 cloves garlic, minced
  • 1 (15-ounce) can white beans, drained and rinsed
  • 24 ounces low-sodium vegetable juice, such as V8
  • 2 tablespoons prepared horseradish, optional
  • Black pepper, to taste
Instructions:
  • In a medium pot, heat the olive oil over medium heat.
